  • 250 ml of fresh pineapple juice
  • 1/4 cup freshly-squeezed lemon juice

  • One tablespoon of honey
  • Half a teaspoon of cayenne pepper

Preparation:

  • 50 g butter

Preparation:

In a pan, caramelize the muscovado sugar, the star anise and cinnamon; then add honey and pineapple cut into slices. Mix briefly, then add the rum and mix briefly again.

Allow the flame to disappear and add orange and lemon juice. Boil briefly and let the liquid reduce. Finally, add the butter, which will give the dessert fine creaminess and density. If desired, sprinkle with chopped mint or almonds.
